Ingredients

For the Tacos:

1 cup crushed graham crackers

1/2 cup unsweetened shredded coconut

1/4 cup melted butter

2 tablespoons sugar

1/2 teaspoon vanilla extract

4 small flour tortillas

For the Cheesecake Filling:

8 oz cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

1/2 cup heavy cream, whipped to stiff peaks

1 cup fresh strawberries, chopped

For the Strawberry Crunch Topping:

1 cup crushed freeze-dried strawberries

1 cup crushed vanilla wafer cookies

2 tablespoons melted butter

For Garnish (optional):

Fresh mint leaves

A drizzle of chocolate or caramel sauce

Instructions

Prepare the Taco Shells: In a bowl, mix the crushed graham crackers, shredded coconut, melted butter, sugar, and vanilla extract until well combined. Preheat your oven to 350°F (175°C). Take 4 small flour tortillas and lightly brush both sides with butter or oil. Shape them over an upside-down muffin tin and bake for 10-12 minutes until golden and crisp. Allow to cool.

Make the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese using an electric mixer until smooth. Gradually add in the powdered sugar and vanilla extract, mixing well. Gently fold in the whipped cream until fully incorporated, then add the chopped strawberries and mix carefully to maintain some of the cream's fluffiness.

Prepare the Crunch Topping: In a separate bowl, combine the crushed freeze-dried strawberries, crushed vanilla wafers, and melted butter. Mix until everything is evenly coated and crumbly.

Assemble the Tacos: Once the taco shells have cooled, spoon in the strawberry cheesecake filling each shell generously. Top with the strawberry crunch topping.

Garnish and Serve: Optionally, garnish your Strawberry Crunch Cheesecake Tacos with fresh mint leaves and a drizzle of chocolate or caramel sauce. Serve immediately for the best crunch!
