1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

1 tablespoon sugar

3 (8 oz) packages cream cheese, softened

1 cup granulated sugar

3 large eggs

1 teaspoon vanilla extract

1 cup sour cream

1 ½ cups fresh strawberries, hulled and puréed

2 tablespoons cornstarch

2 tablespoons powdered sugar

Instructions
 

Preheat your oven to 325°F (160°C) and grease a 9-inch springform pan with butter or non-stick spray.

    In a medium bowl, combine the graham cracker crumbs, melted butter, and sugar. Mix until well blended.

      Press the crust mixture firmly into the bottom of the prepared springform pan to create an even layer. Bake for 10 minutes, then remove from the oven and let cool.

        In a large mixing bowl, beat the softened cream cheese until smooth with an electric mixer.

          Gradually add the granulated sugar and beat until well combined.

            Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract and sour cream until fully incorporated and the batter is smooth.

              In another bowl, combine the strawberry purée, cornstarch, and powdered sugar. Mix until smooth.

                Pour half of the cheesecake batter into the springform pan over the cooled crust.

                  Drizzle half of the strawberry purée mixture on top of the batter. Use a knife to gently swirl the purée into the cheesecake batter for a marbled effect.

                    Pour in the remaining cheesecake batter and then drizzle the remaining strawberry mixture on top. Swirl again with a knife for beautiful patterns.

                      Bake in the preheated oven for 60-70 minutes or until the center is firm and the edges are lightly browned.

                        Turn off the oven, crack the door open, and let the cheesecake cool in the oven for about 1 hour.

                          Remove from the oven and let cool to room temperature before refrigerating for at least 4 hours, or overnight, to set.

                            Once chilled, remove from the springform pan, slice, and serve. Enjoy your Strawberry Swirl Cheesecake!
