Ingredients
  

2 cups cooked jasmine rice

1 lb boneless, skinless chicken thighs

1 cup corn kernels (fresh, frozen, or canned)

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon cumin

1 teaspoon garlic powder

Salt and pepper to taste

1/2 cup crumbled feta cheese

1/4 cup fresh cilantro, chopped

1 lime, zest and juice

1/2 cup mayonnaise

1 tablespoon chili powder

1 avocado, sliced

Instructions
 

Marinate the Chicken: In a bowl, combine olive oil, smoked paprika, cumin, garlic powder, salt, and pepper. Add chicken thighs and coat well. Allow to marinate for at least 30 minutes in the refrigerator.

    Cook the Chicken: Heat a grill or grill pan over medium-high heat. Cook the marinated chicken for about 6-7 minutes on each side or until cooked through. Remove from heat and let it rest before slicing.

      Sauté the Corn: In a skillet, add a little olive oil and heat over medium heat. Add corn kernels and sauté for about 5 minutes until they're slightly charred. Season with salt, pepper, and lime juice.

        Make the Sauce: In a small bowl, mix together mayonnaise, chili powder, lime zest, and a pinch of salt. Adjust seasoning to taste.
