2 cups cooked jasmine rice

1 lb boneless, skinless chicken thighs, cubed

1 cup corn (fresh, canned, or frozen)

1 red bell pepper, diced

1 small red onion, diced

1 avocado, sliced

1/2 cup cotija cheese, crumbled

1/4 cup fresh cilantro, chopped

2 tablespoons olive oil

2 tablespoons mayonnaise

1 tablespoon lime juice

1 teaspoon chili powder

1 teaspoon cumin

Salt and pepper to taste

Lime wedges for serving

Prepare the Chicken: In a bowl, combine cubed chicken thighs with olive oil, chili powder, cumin, salt, and pepper. Let it marinate for about 15-20 minutes.

    Cook the Chicken: In a large skillet over medium-high heat, add the marinated chicken. Cook for about 6-8 minutes, stirring occasionally, until the chicken is golden brown and cooked through. Remove from skillet and set aside.

      Sauté Vegetables: In the same skillet, add a little more olive oil if needed. Sauté the red onion and red bell pepper for 3-4 minutes until they are soft. Add the corn and cook for an additional 2 minutes. Remove from heat.

        Prepare the Sauce: In a small bowl, mix the mayonnaise and lime juice together until smooth. Add salt and pepper to taste.

          Assemble the Bowl: In serving bowls, layer the cooked jasmine rice, followed by the sautéed chicken, corn mixture, and avocado slices. Drizzle with the lime mayonnaise sauce.

            Garnish: Top each bowl with crumbled cotija cheese and chopped cilantro. Serve with lime wedges on the side for an extra zing.
