1 ½ pounds flank steak

1 cup spinach, chopped

½ cup feta cheese, crumbled

¼ cup sun-dried tomatoes, chopped

3 cloves garlic, minced

1 tablespoon fresh oregano, chopped

1 tablespoon olive oil

Salt and pepper to taste

Kitchen twine or toothpicks for securing

Preheat your oven to 375°F (190°C).

    Lay the flank steak flat on a clean cutting board. Using a sharp knife, butterfly the steak by slicing it horizontally, but not all the way through, then open it like a book for even stuffing.

      In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.

        Add the chopped spinach to the skillet, cooking until it wilts, about 2-3 minutes.

          Remove the skillet from the heat and stir in the crumbled feta cheese, chopped sun-dried tomatoes, and fresh oregano. Season with salt and pepper to taste.

            Spread the spinach and feta mixture evenly over the opened flank steak.

              Carefully fold the steak back over to encase the filling. Secure the stuffed flank steak with kitchen twine or toothpicks to keep the filling intact during cooking.

                Season the outside of the steak with salt and pepper.

                  In a hot skillet, sear the stuffed flank steak on high heat for about 3-4 minutes on each side until browned.

                    Transfer the seared flank steak to a baking dish and bake in the preheated oven for 20-25 minutes, or until a meat thermometer reads 145°F (63°C) for medium-rare.

                      Let the steak rest for about 5 minutes before slicing into pinwheels.
