1 (8-10 pound) pork crown roast

2 cups bread crumbs

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Roast: Place the pork crown roast on a large roasting pan. Trim excess fat if necessary and season the inside and outside generously with salt and pepper.

      Make the Stuffing: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened, about 3-5 minutes.

        Combine Ingredients: In a large mixing bowl, combine the sautéed onion and garlic with bread crumbs, diced apples, dried cranberries, chopped pecans, fresh herbs, beaten eggs, and chicken broth. Mix well until the ingredients are evenly combined. Adjust seasoning if necessary.
