Stuffed Salmon Pinwheels - Spinach & Ricotta

Ingredients
  

4 salmon fillets (skinless)

1 cup fresh spinach, chopped

½ cup ricotta cheese

¼ cup grated Parmesan cheese

2 cloves garlic, minced

1 tablespoon olive oil

Zest of 1 lemon

1 teaspoon dried oregano

Salt and pepper to taste

Toothpicks or kitchen twine

Instructions
 

Preheat your oven to 375°F (190°C).

    In a skillet, heat the olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.

      Add the chopped spinach to the skillet and cook until wilted, approximately 2-3 minutes. Remove from heat and let it cool slightly.

        In a mixing bowl, combine the ricotta cheese, grated Parmesan, lemon zest, dried oregano, and the cooked spinach mixture. Season with salt and pepper to taste. Mix well until combined.

          Lay out each salmon fillet on a flat surface. Spread an even layer of the spinach and ricotta mixture on top of each fillet.

            Carefully roll each salmon fillet up tightly from one end to the other to make pinwheels. Secure the ends with toothpicks or tie them with kitchen twine.

              Place the pinwheels seam-side down in a baking dish.

                Bake in the preheated oven for about 15-20 minutes, or until the salmon is opaque and flakes easily with a fork.

                  Remove from the oven and let cool for a few minutes before removing toothpicks or twine.
