Stuffed Sole With Scallops and Crabmeat

Ingredients
  

4 sole fillets (about 6 oz each)

1 cup fresh scallops, chopped

1 cup lump crabmeat, drained and picked for shells

1/2 cup breadcrumbs

1/4 cup grated Parmesan cheese

1/4 cup cream cheese, softened

1 tablespoon fresh chives, chopped

1 tablespoon fresh parsley, chopped

1 tablespoon lemon juice

2 tablespoons butter

Salt and pepper to taste

Lemon wedges for serving

Instructions
 

Preheat your oven to 375°F (190°C).

    In a skillet over medium heat, melt 1 tablespoon of butter. Add the chopped scallops and cook for about 3-4 minutes until opaque. Remove from heat and let cool slightly.

      In a mixing bowl, combine the cooked scallops, lump crabmeat, breadcrumbs, Parmesan cheese, cream cheese, chives, parsley, lemon juice, salt, and pepper. Mix thoroughly until well combined.

        Lay out the sole fillets on a clean surface. Spoon an equal portion of the seafood mixture onto the center of each fillet.

          Gently fold the sides of the fillet over the filling, securing it with toothpicks if necessary.

            Place the stuffed fillets seam-side down in a greased baking dish. Dot the remaining butter on top of the fillets.

              Cover the dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the sole is cooked through and lightly golden.

                Carefully remove the toothpicks before serving.
