12 oz cheese tortellini

1 cup sun-dried tomatoes in oil, drained and chopped

1 cup baby spinach, chopped

1/2 cup black olives, sliced

1/2 cup feta cheese, crumbled

1/4 cup red onion, finely chopped

1/2 cup mozzarella balls, halved

1/4 cup fresh basil leaves, chopped

1/4 cup extra virgin olive oil

2 tablespoons balsamic vinegar

1 teaspoon garlic powder

Salt and pepper to taste

Instructions
 

Cook the cheese tortellini according to package instructions. Drain and rinse under cold water to stop the cooking process. Set aside in a large mixing bowl.

    In the same bowl with the tortellini, add the chopped sun-dried tomatoes, spinach, black olives, feta cheese, red onion, mozzarella balls, and basil leaves.

      In a small bowl, whisk together the extra virgin olive oil, balsamic vinegar, garlic powder, salt, and pepper until well combined.

        Pour the dressing over the tortellini mixture and gently toss until everything is evenly coated.

          Cover the pasta salad and refrigerate for at least 30 minutes to allow the flavors to meld together.

            Before serving, give it a gentle toss, and adjust seasoning if necessary. Enjoy cold or at room temperature!
