4 boneless, skinless chicken breasts

1/2 cup sun-dried tomatoes (packed in oil), drained and chopped

1/4 cup fresh basil leaves, chopped

1/4 cup grated Parmesan cheese

1/4 cup toasted pine nuts

2 cloves garlic, minced

1/4 cup olive oil

Salt and pepper to taste

1 teaspoon dried oregano

1 cup fresh spinach (for serving)

Balsamic glaze (for drizzling, optional)

Instructions
 

Preheat your oven to 375°F (190°C).

    In a blender or food processor, combine the sun-dried tomatoes, fresh basil, Parmesan cheese, pine nuts, minced garlic, and olive oil. Blend until smooth, adding a pinch of salt and pepper to taste.

      Slice a pocket through the thick side of each chicken breast without cutting all the way through.

        Using a spoon, carefully stuff each chicken breast with the sun-dried tomato pesto mixture, securing the opening with toothpicks if necessary.

          Season the outside of the stuffed chicken breasts with salt, pepper, and dried oregano.

            Heat a non-stick skillet over medium-high heat and add a drizzle of olive oil. Once hot, sear the chicken breasts for 3-4 minutes on each side until golden brown.

              Transfer the seared chicken to a baking dish and cover with foil. Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through (internal temperature should reach 165°F / 74°C).

                In the last 5 minutes of baking, remove the foil to allow the chicken to crisp up slightly.

                  Once cooked, let the chicken rest for 5 minutes before removing the toothpicks.
