1 cup orzo pasta

2 cups vegetable broth

1 cup sundried tomatoes, chopped

8 oz Boursin cheese (Garlic & Herbs flavor recommended)

1 cup spinach, roughly chopped

1/2 cup mozzarella cheese, shredded

1/4 cup grated Parmesan cheese

2 cloves garlic, minced

1 teaspoon red pepper flakes (adjust to taste)

1 tablespoon olive oil

Salt and pepper to taste

Fresh basil for garnish (optional)

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Orzo: In a medium saucepan, bring the vegetable broth to a boil. Add the orzo pasta and cook according to package instructions until al dente. Drain and set aside.

      Sauté Vegetables: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Add the chopped sundried tomatoes and spinach, cooking until the spinach wilts. Season with salt, pepper, and red pepper flakes.

        Combine Ingredients: In a large mixing bowl, combine the cooked orzo, sautéed vegetable mixture, and Boursin cheese. Stir until the cheese is well distributed throughout and melted into the warm pasta.

          Transfer to Baking Dish: Pour the orzo mixture into a greased 9x13 inch baking dish. Sprinkle the top with shredded mozzarella and grated Parmesan cheese.

            Bake: Place the baking dish in the preheated oven and bake for about 20-25 minutes, or until the cheese on top is bubbly and golden brown.
