Ingredients

1 lb ground beef

1/2 lb ground pork

1 small onion, finely chopped

2 cloves garlic, minced

1 cup fresh breadcrumbs

1/2 cup whole milk

1 large egg

1 tablespoon Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon dried dill

Salt and pepper to taste

1/2 cup grated Parmesan cheese

1 tablespoon olive oil

1 cup beef broth (low sodium)

1 tablespoon all-purpose flour

Fresh parsley, chopped (for garnish)

Instructions

Preheat Oven: Preheat your oven to 375°F (190°C).

Prepare Meat Mixture: In a large bowl, combine ground beef, ground pork, chopped onion, minced garlic, breadcrumbs, milk, egg, Worcestershire sauce, thyme, dill, salt, and pepper. Mix with your hands until just combined, being careful not to overwork the meat.

Form the Meatloaf: Lightly grease a loaf pan with olive oil. Transfer the meat mixture into the pan, shaping it into a loaf. Press it down slightly to ensure it holds its shape.

Bake the Meatloaf: Place the loaf pan in the preheated oven and bake for 45-50 minutes, or until the internal temperature reaches 160°F (70°C).

Make the Gravy: While the meatloaf is baking, heat a small saucepan over medium heat. Add the beef broth and bring to a simmer. In a separate bowl, whisk together flour and a little bit of cold water until smooth. Stir this mixture into the simmering broth to thicken. Cook for 3-4 minutes, and then season with salt and pepper.

Rest and Slice: Once the meatloaf is cooked, let it rest for about 10 minutes before slicing.

Serve: Serve the meatloaf slices topped with the gravy, garnished with chopped parsley.
