1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces

1 cup pineapple chunks (fresh or canned, drained)

1 bell pepper (red or yellow), chopped

1 cup snap peas, trimmed

½ onion, chopped

3 cloves garlic, minced

1-inch piece of ginger, grated

½ cup ketchup

¼ cup apple cider vinegar

¼ cup brown sugar

2 tablespoons soy sauce

1 tablespoon cornstarch (mixed with 2 tablespoons water to create a slurry)

2 tablespoons vegetable oil

Salt and pepper to taste

Cooked rice or noodles for serving

Instructions
 

In a large bowl, combine ketchup, apple cider vinegar, brown sugar, and soy sauce. Stir until well mixed to create your sweet and sour sauce.

    Heat vegetable oil in a large skillet or wok over medium-high heat. Season the chicken pieces with salt and pepper.

      Add the chicken to the skillet and cook for about 5-7 minutes, until golden and cooked through. Remove the chicken and set aside.

        In the same skillet, add chopped onion, garlic, and ginger. Sauté for 2-3 minutes until fragrant.

          Add in the chopped bell pepper and snap peas, stir-cooking for another 3-4 minutes until just tender.

            Return the cooked chicken to the skillet, and pour the prepared sweet and sour sauce over the top.

              Gently fold in the pineapple chunks. Bring to a simmer and allow to cook for an additional 2-3 minutes, letting the flavors meld.

                Mix in the cornstarch slurry to thicken the sauce, stirring continuously until the sauce reaches your desired consistency, about 1-2 minutes.

                  Serve the sweet and sour chicken over cooked rice or noodles, garnished with sesame seeds or chopped green onions if desired.
