1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces

1 cup pineapple chunks (fresh or canned)

1 red bell pepper, diced

1 green bell pepper, diced

1 medium onion, chopped

1/2 cup sugar

1/3 cup apple cider vinegar

1/4 cup ketchup

2 tablespoons soy sauce

1 tablespoon cornstarch mixed with 2 tablespoons water

2 cloves garlic, minced

1 tablespoon olive oil

Salt and pepper to taste

Cooked rice or quinoa for serving

Instructions
 

Prepare the Chicken: Season the chopped chicken thighs with salt and pepper.

    Sauté Chicken: In a large skillet or wok, heat olive oil over medium-high heat. Add the chicken pieces and cook until golden brown and fully cooked, about 5-7 minutes. Remove the chicken from the skillet and set aside.

      Sauté Vegetables: In the same skillet, add the chopped onion, red bell pepper, and green bell pepper. Sauté for 3-4 minutes until they are tender but still crisp. Add the minced garlic and cook for another minute.

        Make the Sauce: In a bowl, combine sugar, apple cider vinegar, ketchup, soy sauce, and the cornstarch mixture. Stir until well mixed.

          Combine Ingredients: Return the chicken to the skillet with the sautéed vegetables. Pour the sauce over the top and add the pineapple chunks. Stir everything together, and let it simmer for about 3-5 minutes until the sauce thickens slightly.

            Serve: Taste and adjust seasoning if necessary. Serve the tropical sweet and sour chicken over cooked rice or quinoa.
