Sweet and Spicy Korean Meatballs

1 lb ground beef (or ground turkey)

1/4 cup breadcrumbs

1/4 cup scallions, finely chopped

2 cloves garlic, minced

1 egg

1 tablespoon sesame oil

1 tablespoon soy sauce

1 tablespoon brown sugar

1 teaspoon ginger, grated

1/2 teaspoon black pepper

1/2 teaspoon red pepper flakes (adjust for spice preference)

1 tablespoon gochujang (Korean chili paste)

1/4 cup honey

2 tablespoons rice vinegar

Sesame seeds and extra scallions for garnish

Instructions
 

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    In a large mixing bowl, combine the ground beef, breadcrumbs, chopped scallions, minced garlic, egg, sesame oil, soy sauce, brown sugar, grated ginger, black pepper, red pepper flakes, and gochujang. Mix thoroughly until all ingredients are well incorporated.

      Using your hands, form the mixture into small meatballs, about 1 inch in diameter, and place them on the prepared baking sheet, spacing them evenly apart.

        Bake the meatballs in the preheated oven for about 20-25 minutes or until cooked through and nicely browned.

          While the meatballs are baking, prepare the sauce by combining honey, rice vinegar, and gochujang in a small saucepan. Heat over medium heat, stirring until the mixture is smooth and begins to bubble. Reduce the heat to low and let simmer for 5 minutes.

            Once the meatballs are done, remove them from the oven and gently toss them in the sweet and spicy sauce, making sure each meatball is well coated.

              Return the coated meatballs to the baking sheet for an additional 5 minutes in the oven to allow the sauce to caramelize slightly.

                Remove from the oven and arrange the meatballs on a serving platter. Sprinkle with sesame seeds and extra chopped scallions for garnish.
