2 cups shredded carrots

1 large apple (like Granny Smith), grated

1 cup red cabbage, finely shredded

1/2 cup raisins or dried cranberries

1/4 cup green onions, chopped

1/2 cup plain Greek yogurt

2 tablespoons apple cider vinegar

1 tablespoon honey or maple syrup

1 teaspoon Dijon mustard

Salt and pepper to taste

Instructions
 

In a large mixing bowl, combine the shredded carrots, grated apple, and red cabbage.

    Add the raisins (or dried cranberries) and chopped green onions to the bowl.

      In a separate small bowl, whisk together the Greek yogurt, apple cider vinegar, honey (or maple syrup), Dijon mustard, salt, and pepper until smooth and well-blended.

        Pour the dressing over the vegetable mixture and toss until everything is evenly coated.

          Taste and adjust seasoning if necessary, adding more salt, pepper, or honey to suit your preference.
