4 large sweet potatoes, peeled and cubed

1/2 cup maple syrup

1/4 cup unsalted butter, melted

1/2 cup brown sugar

1 teaspoon cinnamon

1/2 teaspoon nutmeg

1/4 teaspoon salt

1/2 cup pecans, chopped

2 cups mini marshmallows

Instructions
 

Preheat your oven to 350°F (175°C).

    Place the cubed sweet potatoes in a large pot and cover with water. Bring to a boil and cook for about 15-20 minutes, or until the potatoes are tender.

      Drain the sweet potatoes and return them to the pot. Mash them with a potato masher until smooth.

        In a mixing bowl, combine the mashed sweet potatoes, maple syrup, melted butter, brown sugar, cinnamon, nutmeg, and salt. Mix until well combined and creamy.

          Spread the sweet potato mixture evenly in a greased 9x13-inch baking dish.

            In a small bowl, mix the chopped pecans with a tablespoon of brown sugar (this adds a nice crunch and extra flavor). Sprinkle the pecan mixture evenly over the sweet potatoes.

              Scatter mini marshmallows on top of the pecans, covering the surface generously.

                Bake in the preheated oven for 25-30 minutes, or until the marshmallows are golden brown and toasted.

                  Remove from the oven and let cool for a few minutes before serving. Enjoy!
