2 large sweet potatoes (about 2 cups mashed)

1 cup granulated sugar

1/2 cup brown sugar

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground ginger

3 large eggs

1 teaspoon vanilla extract

1 cup evaporated milk

1 tablespoon unsalted butter, softened

1 pre-made 9-inch pie crust (store-bought or homemade)

Whipped cream (for serving, optional)

Instructions
 

Preheat your oven to 350°F (175°C).

    Begin by cooking the sweet potatoes: peel, cut into chunks, and boil them in water until fork-tender, about 15-20 minutes. Drain and let cool slightly.

      In a large mixing bowl, mash the cooked sweet potatoes until smooth. You should have about 2 cups of mashed sweet potatoes.

        Add the granulated sugar, brown sugar, salt, cinnamon, nutmeg, and ginger. Mix until well combined.

          Beat in the eggs one at a time, followed by the vanilla extract and evaporated milk. Blend all ingredients until smooth and creamy.

            Pour the sweet potato mixture into the pre-made pie crust, spreading it evenly.

              Bake in the preheated oven for 45-50 minutes, or until the filling is set and a knife inserted in the center comes out clean.

                Once baked, remove the pie from the oven and let it cool on a wire rack for at least 2 hours before serving. This allows the filling to firm up a bit more.

                  Serve slices of sweet potato pie topped with whipped cream if desired.
