1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

1 cup bell peppers (red, green, yellow), chopped

1 medium onion, chopped

2 cloves garlic, minced

1 cup pineapple chunks (fresh or canned)

1/2 cup sugar

1/2 cup apple cider vinegar

1 tablespoon soy sauce

1 tablespoon ketchup

2 teaspoons cornstarch mixed with 2 tablespoons water (for thickening)

2 tablespoons vegetable oil

Salt and pepper to taste

Sesame seeds for garnish (optional)

Cooked rice for serving

Prep the Chicken: Season the chicken pieces with salt and pepper.

    Cook Chicken: In a large skillet or wok, heat vegetable oil over medium-high heat. Add the chicken and cook for about 5-7 minutes or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

      Sauté Vegetables: In the same skillet, add chopped onions, garlic, and bell peppers. Sauté for 4-5 minutes until they are tender but still crisp.

        Prepare Sweet & Sour Sauce: In a medium bowl, whisk together sugar, apple cider vinegar, soy sauce, and ketchup until well combined. Pour the sauce over the sautéed vegetables in the skillet.

          Add Pineapple: Add the pineapple chunks to the skillet and stir gently to combine.

            Thicken Sauce: Bring the mixture to a simmer. Stir in the cornstarch mixture and cook for an additional 2-3 minutes until the sauce thickens.

              Combine Chicken: Return the cooked chicken to the skillet and toss everything together to ensure the chicken is well coated with the sauce. Heat through for about 2 minutes.

                Serve: Serve the sweet & sour chicken over a bed of cooked rice and garnish with sesame seeds if desired.
