4 cups water

2 tablespoons fresh ginger, grated

2 cups fresh or frozen cherries, pitted

4 black tea bags (or 4 teaspoons loose black tea)

½ cup honey or maple syrup (adjust to taste)

1 teaspoon cayenne pepper (adjust to taste)

Juice of 1 lemon

Ice cubes

Fresh mint leaves for garnish

Instructions
 

In a medium-sized pot, bring 4 cups of water to a boil.

    Add the grated ginger and cherries to the boiling water. Using a wooden spoon, gently mash the cherries to release their juices.

      Let this mixture simmer for about 10 minutes to infuse the flavors, stirring occasionally.

        Remove the pot from heat and add the black tea bags. Steep for 5-7 minutes based on how strong you like your tea.

          After steeping, remove the tea bags and stir in the honey (or maple syrup), cayenne pepper, and lemon juice. Adjust sweetness and spice levels to your preference.

            Let the tea cool to room temperature, then strain the mixture through a fine mesh sieve into a pitcher to remove the ginger, cherry pulp, and solids.

              Refrigerate the tea for at least 1 hour, or until well chilled.

                To serve, fill glasses with ice cubes, pour the chilled tea over the ice, and garnish with fresh mint leaves.
