1 cup bulgur wheat, fine or medium

2 cups boiling water

1 cup fresh parsley, finely chopped

1 cup fresh cilantro, finely chopped

1 large tomato, diced

1 cucumber, seeded and diced

1 small red onion, finely chopped

4 tablespoons fresh lemon juice

3 tablespoons olive oil

Salt and pepper to taste

1/4 teaspoon ground cumin (optional for a twist)

Instructions
 

In a medium bowl, combine the bulgur wheat with boiling water, cover, and let sit for about 30 minutes, or until the water is absorbed and the bulgur is tender.

    Once the bulgur has cooled, fluff it with a fork and transfer it to a large mixing bowl.

      Add the finely chopped parsley, cilantro, diced tomato, cucumber, and red onion to the bulgur.

        In a small bowl, whisk together the fresh lemon juice, olive oil, salt, pepper, and ground cumin if using.

          Pour the dressing over the tabbouleh mixture and toss everything together gently until well combined.

            Taste and adjust the seasoning if needed, adding more salt, pepper, or lemon juice as desired.

              Chill in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
