1 pound ground beef (or your choice of ground meat)

1 packet taco seasoning

1 cup chopped bell peppers (red and green)

1 cup shredded cheddar cheese

1 cup diced tomatoes

1 cup lettuce, shredded

12 taco shells (mini size)

1 cup sour cream (for topping)

Fresh cilantro, chopped (for garnish)

Optional: jalapeño slices, for heat

Instructions
 

Preheat your oven to 350°F (175°C).

    In a large skillet over medium heat, cook the ground beef until browned, breaking it apart with a spatula. Drain excess grease.

      Stir in the taco seasoning and according to the packet instructions, add the necessary water. Simmer for about 5 minutes until the mixture is well combined and heated through.

        While the beef is simmering, prepare a cupcake tin by greasing it lightly or using cupcake liners.

          Take one taco shell and carefully shape it into a cupcake mold by pressing it into the cupcake tin, ensuring the bottom is flat and the edges come up the sides. Repeat this for all 12 taco shells.

            Spoon the seasoned beef mixture evenly into each taco shell.

              Sprinkle a layer of chopped bell peppers over the beef in each cupcake. Then add a generous amount of shredded cheddar cheese on top of the peppers.

                Place the taco cupcakes in the preheated oven and bake for about 10-12 minutes, or until the cheese is melted and bubbly.

                  Once baked, let the taco cupcakes cool for a minute before carefully removing them from the tin using tongs.

                    Top each taco cupcake with diced tomatoes, shredded lettuce, a dollop of sour cream, and garnish with fresh cilantro. Add jalapeño slices for an extra kick if desired.
