8 oz. rotini pasta

1 lb. ground beef or turkey

1 packet taco seasoning

1 can (15 oz) black beans, drained and rinsed

1 cup cherry tomatoes, halved

1 cup corn (fresh, frozen, or canned)

1 cup bell pepper, diced (any color)

1/2 cup red onion, finely chopped

1 cup shredded cheddar cheese

1/2 cup Greek yogurt (or sour cream)

1/4 cup mayonnaise

1 lime, juiced

1/4 cup cilantro, chopped (optional)

Salt and pepper to taste

Tortilla chips for garnish (optional)

Instructions
 

Begin by cooking the rotini pasta according to package instructions. Drain and rinse with cold water to stop the cooking process. Set aside.

    In a large skillet, brown the ground beef (or turkey) over medium heat until fully cooked, breaking it apart with a spatula. Drain any excess grease.

      Add the taco seasoning to the skillet with the meat and follow the package instructions, usually adding water and simmering for a few minutes. Once combined, set aside to cool slightly.

        In a large mixing bowl, combine the cooked pasta, black beans, cherry tomatoes, corn, bell pepper, red onion, and cooked meat. Toss gently to combine all the ingredients.

          In a small bowl, whisk together the Greek yogurt, mayonnaise, lime juice, salt, and pepper until smooth. Adjust seasoning to taste.

            Pour the dressing over the pasta salad mixture and toss to ensure everything is evenly coated. If desired, add chopped cilantro for extra flavor and freshness.

              Chill the salad in the refrigerator for at least 30 minutes to allow the flavors to meld.

                Before serving, give the salad a gentle stir and taste for seasoning, adding more lime juice or salt if needed.

                  Serve in individual bowls or a large serving dish, garnished with crumbled tortilla chips on top for added crunch.
