12 oz cheese tortellini (fresh or frozen)

1 lb ground beef or turkey

1 packet taco seasoning

1 can (14 oz) diced tomatoes with green chilies

1 cup low-sodium chicken broth

1 cup corn kernels (fresh, frozen, or canned)

1 cup black beans (drained and rinsed)

1 bell pepper (red or yellow), diced

1 small onion, diced

2 cloves garlic, minced

1 cup shredded cheddar cheese

1/2 cup sour cream (optional)

Fresh cilantro, chopped (for garnish)

Salt and pepper, to taste

Instructions
 

In a large pot or Dutch oven over medium heat, add the ground beef or turkey. Cook until browned, breaking it into small pieces with a spoon, about 5-7 minutes. Season with salt and pepper to taste.

    Add the diced onion and bell pepper to the pot and sauté until softened, about 3-4 minutes. Stir in the minced garlic and cook for another 1-2 minutes until fragrant.

      Sprinkle the taco seasoning over the cooked meat and vegetables, then add the diced tomatoes (with their juice), chicken broth, corn, black beans, and tortellini. Stir everything well to combine.

        Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 10-12 minutes, or until the tortellini is cooked through and tender. Stir occasionally to prevent sticking.

          Once cooked, remove the pot from heat and stir in the shredded cheese until melted and creamy. If desired, mix in sour cream for added richness.

            Taste and adjust seasoning if necessary. If the dish is too thick, you can add a splash more chicken broth to reach your desired consistency.

              Garnish with fresh chopped cilantro before serving.
