2 cups all-purpose flour

1 cup granulated sugar

1/2 cup unsalted butter, softened

1 cup pineapple juice (freshly squeezed for best flavor)

3 large eggs

2 teaspoons baking powder

1 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon vanilla extract

1/2 cup crushed pineapple, drained

1/2 cup unsweetened shredded coconut (optional)

Instructions
 

Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan or line it with parchment paper for easy removal.

    In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 2-3 minutes using an electric mixer.

      Add the eggs one at a time, mixing well after each addition. Then stir in the vanilla extract and pineapple juice until well blended.

        In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.

          Gradually add the dry ingredients to the wet mixture, mixing until just combined.

            Gently fold in the crushed pineapple and shredded coconut (if using) until evenly incorporated.

              Pour the batter into the prepared baking pan and smooth the top with a spatula.

                Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
