shrimp, peeled and deveined

mixed vegetables (bell peppers, broccoli, snap peas)

vegetable oil

green onions, chopped

low-sodium soy sauce

honey or maple syrup

rice vinegar

teaspoon
sesame oil

tablespoon
cornstarch mixed with 2 tablespoons water
to taste
sesame seeds for garnish
Instructions
In a small bowl, mix the soy sauce, honey (or maple syrup), rice vinegar, sesame oil, and ginger to create the teriyaki sauce.
Heat the vegetable oil in a large skillet or wok over medium-high heat.
Add the minced garlic and sauté for 30 seconds until fragrant.
Add the shrimp to the pan and cook for about 2-3 minutes until they turn pink and opaque. Remove the shrimp and set aside.
In the same pan, add the mixed vegetables and stir-fry for 3-4 minutes until they are tender-crisp.
Return the shrimp to the skillet with the vegetables, then pour the teriyaki sauce over the top. Stir well to combine.
Add the cornstarch mixture to the pan, stirring constantly until the sauce thickens, about 1-2 minutes.
Stir in the chopped green onions and turn off the heat.
Notes
Serve over jasmine rice or quinoa, garnished with sesame seeds and green onions.
