1 cup cream cheese, softened

1 cup shredded cheddar cheese

1 cup diced green chilies (canned)

1/2 cup diced jalapeños (fresh or pickled)

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup all-purpose flour

2 large eggs, beaten

2 cups breadcrumbs (Panko preferred for extra crunch)

Vegetable oil, for frying

Ranch dressing (for serving)

Instructions
 

In a mixing bowl, combine the cream cheese, shredded cheddar cheese, diced green chilies, and jalapeños. Mix until well combined.

    Add the garlic powder, onion powder, smoked paprika, salt, and black pepper to the cheese mixture, and stir until fully incorporated.

      Once the mixture is combined, shape it into small balls (about 1-inch in diameter) and place them on a baking sheet lined with parchment paper. Freeze for about 30 minutes to firm up.

        Set up a breading station: place flour in a shallow dish, beaten eggs in another dish, and breadcrumbs in a third dish.

          Remove the cheese balls from the freezer. Roll each ball in flour, dip into the beaten eggs, and then coat with breadcrumbs, ensuring each ball is evenly covered.

            In a deep frying pan or pot, heat vegetable oil over medium heat (about 350°F or 175°C). Carefully drop in the coated cheese balls in batches, being careful not to overcrowd the pan.

              Fry the bites until golden brown (about 3-4 minutes) on all sides. Use a slotted spoon to remove them and transfer to a paper towel-lined plate to drain excess oil.
