Ingredients

1 cup long-grain rice

2 cups chicken broth (or vegetable broth for a vegetarian option)

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon onion powder

1 teaspoon garlic powder

½ teaspoon black pepper

½ teaspoon cayenne pepper (adjust to taste)

¼ teaspoon salt

2 tablespoons chopped fresh parsley (for garnish)

Instructions

Rinse the long-grain rice under cold water until the water runs clear. This helps to remove excess starch and keeps the rice fluffy.

In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent.

Add the minced garlic to the onions and sauté for an additional minute until fragrant.

Stir in the smoked paprika, onion powder, garlic powder, black pepper, cayenne pepper, and salt. Cook for 30 seconds while stirring to toast the spices.

Pour in the rinsed rice, stirring to coat the grains with the onion and spice mixture. Toast the rice for about 2-3 minutes, stirring occasionally.

Add the chicken broth to the saucepan, bringing it to a boil.

Once boiling, reduce the heat to low, cover, and simmer for 15-18 minutes, or until the rice is tender and the liquid is absorbed.

After cooking, remove from heat and let it sit, covered, for an additional 5 minutes. Fluff the rice with a fork before serving.

Garnish with chopped fresh parsley and serve warm.
