THAI CHICKEN NOODLE SOUP

2 chicken breasts, thinly sliced

200g rice noodles

4 cups chicken broth

1 can (400ml) coconut milk

2 tablespoons red curry paste

1 tablespoon fresh ginger, grated

2 garlic cloves, minced

1 tablespoon fish sauce

1 tablespoon lime juice

1 bell pepper, thinly sliced

1 cup sliced mushrooms

1 cup bean sprouts

2 green onions, chopped

Fresh cilantro for garnish

Salt and pepper to taste

Instructions
 

Bring a large pot of water to a boil and cook the rice noodles according to package instructions. Drain and set aside.

    In a separate pot, heat a bit of oil over medium heat. Add the minced garlic and grated ginger, sautéing for 1-2 minutes until fragrant.

      Add the thinly sliced chicken breasts to the pot and cook until they are no longer pink, about 5-7 minutes.

        Stir in the red curry paste and cook for another 2 minutes, allowing the flavors to blend.

          Pour in the chicken broth and coconut milk, stirring to combine. Bring the soup to a gentle simmer.

            Add the fish sauce, lime juice, sliced bell pepper, and mushrooms, cooking for an additional 5 minutes until the vegetables are tender.

              Season with salt and pepper to taste.

                To serve, place a portion of cooked rice noodles in a bowl, ladle the soup over the noodles, and top with bean sprouts and chopped green onions.

                  Garnish with fresh cilantro before serving.
