Ingredients
  

500g boneless chicken thighs, cut into thin strips

1 cup coconut milk

2 tablespoons peanut butter

3 tablespoons soy sauce

2 tablespoons brown sugar

2 cloves garlic, minced

1 teaspoon ground coriander

1 teaspoon ground cumin

1 tablespoon fresh lime juice

1 teaspoon turmeric powder

Wooden skewers (soaked in water for 30 minutes)

For the Peanut Sauce:

1/2 cup peanut butter

1/4 cup coconut milk

2 tablespoons lime juice

2 tablespoons soy sauce

1 tablespoon brown sugar

1 teaspoon red pepper flakes (adjust for spiciness)

Instructions
 

Marinate the Chicken: In a large bowl, combine the coconut milk, peanut butter, soy sauce, brown sugar, minced garlic, coriander, cumin, lime juice, and turmeric. Whisk until smooth. Add the chicken strips to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, preferably overnight for maximum flavor.

    Prepare the Peanut Sauce: In a medium bowl, mix together peanut butter, coconut milk, lime juice, soy sauce, brown sugar, and red pepper flakes. Whisk until well combined. Adjust seasoning and spice level to taste. Set aside.

      Skewer the Chicken: Preheat your grill or grill pan over medium-high heat. Thread the marinated chicken strips onto the soaked wooden skewers, making sure they are not crowded but tightly packed.

        Grill the Satay: Place the skewers onto the grill and cook for about 4-5 minutes on each side or until the chicken is cooked through and has nice grill marks. Baste with extra marinade during grilling for added flavor, but make sure to discard any leftover marinade that has come into contact with raw chicken.

          Serve: Arrange the grilled chicken satay on a platter. Drizzle with the prepared peanut sauce and serve with additional sauce on the side for dipping. Garnish with chopped cilantro and lime wedges if desired.
