Ingredients
  

1 pound boneless, skinless chicken thighs, cut into bite-sized pieces

2 tablespoons vegetable oil

1 red bell pepper, thinly sliced

1 cup broccoli florets

3 green onions, chopped

2 cloves garlic, minced

1 tablespoon fresh ginger, minced

1 teaspoon red pepper flakes (adjust for spice preference)

1 cup coconut milk

1/2 cup creamy peanut butter

2 tablespoons soy sauce

1 tablespoon lime juice

1 tablespoon brown sugar

Salt and pepper, to taste

Chopped cilantro and crushed peanuts for garnish

Instructions
 

Marinate the Chicken: In a medium bowl, combine chicken pieces with soy sauce, lime juice, and a pinch of salt. Let marinate for at least 15 minutes.

    Sauté the Aromatics: Heat the vegetable oil in a large skillet over medium-high heat. Add garlic, ginger, and red pepper flakes. Sauté for about 1 minute until fragrant.

      Cook the Chicken: Add the marinated chicken to the skillet. Cook for 5-7 minutes until the chicken is browned and cooked through. Remove from skillet and set aside.

        Stir-fry the Vegetables: In the same skillet, add sliced red bell pepper and broccoli florets. Stir-fry for about 3-4 minutes, just until tender-crisp.

          Prepare the Sauce: In a mixing bowl, whisk together coconut milk, peanut butter, and brown sugar until smooth. Pour the sauce into the skillet with the vegetables.

            Combine Everything: Return the cooked chicken to the skillet and mix well to coat everything in the creamy peanut sauce. Allow to simmer for an additional 2-3 minutes, stirring occasionally.

              Serve: Once everything is heated through, taste and adjust seasoning with salt and pepper if needed. Serve hot, garnished with chopped cilantro and crushed peanuts over rice or noodles.
