Thanksgiving Wild Rice

1 cup wild rice blend (mixture of wild and brown rice)

3 cups vegetable broth

½ cup diced onion

½ cup diced celery

½ cup diced carrots

1 cup chopped mushrooms (shiitake or cremini recommended)

½ cup dried cranberries

¼ cup pecans, chopped

¼ teaspoon dried thyme

¼ teaspoon dried rosemary

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley for garnish

Instructions
 

Rinse the wild rice blend under cold running water until the water runs clear. Drain well.

    In a medium saucepan, combine the wild rice blend and vegetable broth. Bring to a boil over medium-high heat.

      Once boiling, reduce the heat to low, cover, and simmer for about 40-45 minutes or until the rice is tender and has absorbed most of the liquid. Remove from heat and let it sit, covered, for an additional 10 minutes.

        While the rice cooks, heat olive oil in a large skillet over medium heat. Add the diced onion, celery, and carrots. Sauté for about 5 minutes until the vegetables are tender.

          Add the chopped mushrooms to the skillet and cook for another 5 minutes until softened.

            Stir in the dried cranberries, chopped pecans, thyme, and rosemary. Cook for another 2-3 minutes to allow the flavors to meld.

              Fluff the cooked wild rice with a fork and transfer it to the skillet with the sautéed vegetables. Gently mix to combine all ingredients. Season with salt and pepper to taste.

                Remove from heat and let it sit for a few minutes before serving.

                    - Presentation Tips: Serve the wild rice medley in a large serving bowl. Garnish with fresh parsley and an extra sprinkle of pecans for crunch. You can also place a few dried cranberries on top for added color.
