Ingredients

4 large russet potatoes, peeled and diced

1 large onion, diced

3 cloves garlic, minced

4 cups vegetable or chicken broth

1 cup heavy cream

1 cup milk (or a milk alternative)

4 tablespoons unsalted butter

2 teaspoons salt

1/2 teaspoon black pepper

1 teaspoon dried thyme

1/2 teaspoon paprika (optional, for a hint of spice)

1 cup shredded cheddar cheese (optional, for garnish)

Chopped green onions or chives (for garnish)

Instructions

Sauté the Aromatics: In a large pot, melt the butter over medium heat. Add the diced onion and cook until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.

Add the Potatoes: Add the diced potatoes to the pot and stir to combine with the onion and garlic. Cook for 2-3 minutes, allowing the potatoes to absorb the flavors.

Pour in the Broth: Add the vegetable or chicken broth, salt, black pepper, and thyme. Bring the mixture to a boil, then reduce the heat to a simmer. Cover the pot and cook for about 15-20 minutes, or until the potatoes are tender and easily pierced with a fork.

Blend the Soup: Once the potatoes are cooked, you can either use an immersion blender for a chunky texture or transfer the soup in batches to a regular blender for a smoother consistency. Blend until you reach your desired texture.

Cream it Up: Return the blended soup to the pot (if using a regular blender). Stir in the heavy cream and milk, adjusting the consistency with more milk if needed. Allow the soup to simmer gently for another 5-10 minutes, stirring frequently.

Taste and Adjust: Taste the soup and adjust the seasoning with more salt, pepper, or paprika if desired.

Serve: Ladle the creamy potato soup into bowls. Top with shredded cheddar cheese and chopped green onions or chives for garnish.
