Ingredients
  

1 lb ground beef (preferably lean)

1 medium onion, finely chopped

3 cloves garlic, minced

8 oz mushrooms, sliced (cremini or button)

2 tbsp olive oil

1 tsp Worcestershire sauce

1 cup beef broth (low sodium)

1 cup sour cream

1 tbsp Dijon mustard

1 tsp paprika

Salt and black pepper, to taste

12 oz wide egg noodles

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Noodles: In a large pot, boil salted water and cook the egg noodles according to package instructions until al dente. Drain and set aside.

    Brown the Beef: In a large skillet, heat olive oil over medium heat. Add the ground beef and cook until browned, breaking it up into small pieces as it cooks. Season with salt and pepper. Once browned, remove the beef from the skillet and set aside.

      Sauté Aromatics: In the same skillet, add chopped onions and garlic. Sauté for about 3-4 minutes until they are translucent.

        Add Mushrooms: Stir in the sliced mushrooms and continue to cook for another 5 minutes until they are golden and tender.

          Combine Ingredients: Return the cooked ground beef to the skillet with mushrooms and onions. Stir in the Worcestershire sauce and paprika, mixing well.

            Create the Sauce: Pour in the beef broth, bringing it to a gentle simmer. Allow it to cook for about 3-4 minutes, letting the flavors meld.

              Finish with Cream: Lower the heat and stir in the sour cream and Dijon mustard. Mix until smooth and warmed through. Adjust seasoning with additional salt and pepper, if needed.

                Combine with Noodles: Toss the cooked egg noodles into the beef stroganoff sauce, mixing until the noodles are well coated with the creamy sauce.
