Ingredients
  

1 lb ground beef

1 medium onion, diced

2 cloves garlic, minced

2 cups mixed frozen vegetables (carrots, peas, corn)

1 can (15 oz) diced tomatoes with green chilies

1 cup beef broth

2 cups potatoes, diced (about 3 medium potatoes)

1 tsp paprika

1 tsp dried thyme

Salt and pepper, to taste

1 cup shredded cheddar cheese

Optional: 1 cup crescent roll dough (for topping)

Instructions
 

Preheat the oven to 350°F (175°C).

    In a large skillet, brown the ground beef over medium heat. Drain the excess fat.

      Add the diced onion and minced garlic to the skillet, cooking until the onion is translucent and fragrant, about 3-4 minutes.

        Stir in the mixed vegetables, diced tomatoes (with juice), beef broth, diced potatoes, paprika, thyme, salt, and pepper. Combine well and let it simmer for about 10 minutes, allowing the flavors to meld together.

          Transfer the meat and vegetable mixture into a large casserole dish, smoothing it out evenly.

            If using, unroll the crescent roll dough and place it over the casserole, covering as much surface area as possible. Alternatively, you can sprinkle shredded cheese on top of the mixture before baking.

              Bake in the preheated oven for 30-35 minutes, or until the potatoes are tender and the cheese is melted and golden brown.

                Let it cool for a few minutes before serving. Garnish with fresh herbs if desired.
