1 lb ground beef

1 medium onion, chopped

2 cloves garlic, minced

1 can (15 oz) diced tomatoes, undrained

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) corn, drained

2 medium potatoes, thinly sliced

1 cup shredded cheddar cheese

1 tablespoon Worcestershire sauce

2 teaspoons Italian seasoning

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Preheat the oven: Set your oven to 375°F (190°C).

    Cook the beef: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic. Sauté until the onion is translucent, about 3-4 minutes. Add the ground beef, breaking it apart with a spatula. Cook until browned and no longer pink, about 5-7 minutes. Drain excess fat if necessary.

      Mix ingredients: Stir in the diced tomatoes (with juices), kidney beans, corn, Worcestershire sauce, Italian seasoning, salt, and pepper into the skillet. Let it simmer for about 5 minutes to meld the flavors.

        Layer the casserole: In a greased 9x13 inch baking dish, place half of the sliced potatoes at the bottom. Spread half of the beef mixture over the potatoes. Repeat with the remaining potatoes and the rest of the beef mixture.

          Add cheese: Sprinkle the shredded cheddar cheese evenly on top of the casserole.

            Cover and bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes. Then, remove the foil and bake for an additional 15-20 minutes, or until the potatoes are tender and the cheese is bubbly and golden.

              Serve: Remove the casserole from the oven and let it rest for about 5 minutes. Garnish with fresh parsley before serving.
