3 lbs beef chuck roast, cut into large chunks

3 dried guajillo peppers, seeds removed

2 dried ancho peppers, seeds removed

2 cloves garlic, minced

1 onion, quartered

1 teaspoon cumin powder

1 teaspoon dried oregano

1 teaspoon smoked paprika

1 tablespoon apple cider vinegar

4 cups beef broth

Salt and pepper to taste

Corn tortillas, for serving

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Prepare the Sauce: In a dry skillet over medium heat, toast the guajillo and ancho peppers for about 2–3 minutes until fragrant. Remove the skins and place them in a blender.

    Blend the Ingredients: Add the minced garlic, onion, cumin, oregano, smoked paprika, apple cider vinegar, and a pinch of salt to the blender with the peppers. Add about 1 cup of beef broth and blend until smooth.

      Season the Meat: Season the beef chuck pieces with salt and pepper.

        Combine in Crockpot: Place the beef in the crockpot and pour the blended sauce over it. Add the remaining beef broth.

          Cook: Cover and cook on low for 8 hours or high for 4 hours, until the meat is fork-tender.

            Shred the Meat: Once cooked, shred the beef using two forks and mix it with the sauce in the crockpot.

              Warm the Tortillas: In a separate skillet, warm the corn tortillas over medium-high heat for about 30 seconds on each side until soft and pliable.

                Assemble Tacos: Spoon the shredded birria into the tortillas, garnish with fresh cilantro, and serve with lime wedges on the side.
