Ingredients
  

1 sheet of puff pastry, thawed

2 medium apples (such as Granny Smith or Honeycrisp), cored and sliced thinly

1 cup Brie cheese, rind removed and cut into small pieces

3 tablespoons brown sugar

1 teaspoon cinnamon

2 tablespoons unsalted butter

1 tablespoon honey

1 egg (for egg wash)

Fresh thyme leaves, for garnish (optional)

Instructions
 

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    In a medium bowl, combine the thinly sliced apples, brown sugar, and cinnamon. Toss until the apples are evenly coated.

      In a skillet over medium heat, melt the butter. Add the coated apple slices and sauté for about 5-7 minutes until the apples begin to soften but still hold their shape. Remove from heat and stir in the honey.

        Roll out the thawed puff pastry on a lightly floured surface to smooth out creases. Cut the pastry into 4 equal squares and transfer them to the lined baking sheet.

          With a sharp knife, lightly score a ½-inch border around each square, being careful not to cut all the way through. This will help the edges puff up beautifully.

            Place a few pieces of Brie cheese in the center of each pastry square and then top with the sautéed apple mixture, spreading it evenly.

              Brush the edges of the pastry with the beaten egg to create a golden crust when baked.

                Bake in the preheated oven for about 20-25 minutes or until the pastry is puffed and golden brown.

                  Once done, remove from the oven and let cool for a few minutes. Optionally, garnish with fresh thyme leaves before serving.
