1.5 lbs beef chuck, cut into 1-inch cubes

2 tablespoons vegetable oil

1 large onion, finely chopped

3 cloves garlic, minced

2 bell peppers (red and green), diced

2 medium carrots, diced

3 medium potatoes, peeled and chopped

1 can (14 oz) diced tomatoes, undrained

2 cups beef broth

2 tablespoons paprika (sweet or smoked)

1 teaspoon caraway seeds

1/2 teaspoon dried thyme

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Heat the vegetable oil in a large pot or Dutch oven over medium-high heat.

    Add the beef cubes in batches, browning them on all sides for about 5-7 minutes. Remove the beef and set aside.

      In the same pot, add the chopped onion and garlic. Sauté for 3-4 minutes until the onion becomes translucent.

        Stir in the diced bell peppers and carrots, cooking for an additional 5 minutes until slightly softened.

          Return the browned beef to the pot along with the diced potatoes.

            Pour in the diced tomatoes and beef broth, then add paprika, caraway seeds, thyme, salt, and pepper. Stir well to combine all ingredients.

              Bring the mixture to a boil, then reduce heat to low. Cover and simmer for about 1.5 to 2 hours, or until the beef is tender and the flavors meld beautifully.

                Stir occasionally and adjust seasoning if needed.

                  Once cooked, serve hot, garnished with freshly chopped parsley.
