1 cup strong brewed coffee, cooled

2 tablespoons coffee extract

3 large eggs, separated

1 cup granulated sugar

1 cup mascarpone cheese

1 teaspoon vanilla extract

24 ladyfinger cookies

2 tablespoons unsweetened cocoa powder

Dark chocolate shavings (for garnish)

Pinch of salt

Instructions
 

Brew a strong cup of coffee and allow it to cool. Stir in the coffee extract and set aside.

    In a large mixing bowl, whisk the egg yolks and half of the sugar (1/2 cup) until the mixture is pale and creamy.

      Add the mascarpone cheese and vanilla extract to the egg mixture, and gently fold until smooth and well combined.

        In a separate bowl, beat the egg whites with a pinch of salt until soft peaks form. Gradually add the remaining sugar (1/2 cup) and continue beating until stiff peaks are formed.

          Carefully fold the whipped egg whites into the mascarpone mixture until no white streaks remain. Be gentle to maintain the airy texture.

            Quickly dip each ladyfinger into the coffee mixture (do not soak) and arrange them in a single layer at the bottom of a 9x9-inch dish.

              Spread half of the mascarpone mixture over the layer of ladyfingers. Smooth it out evenly.

                Repeat the process by dipping the remaining ladyfingers in the coffee mixture and layering them on top of the mascarpone layer.

                  Spread the remaining mascarpone mixture over the second layer of ladyfingers, smoothing the top with a spatula.

                    Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight for best flavor and texture.

                      Before serving, dust the top generously with cocoa powder and sprinkle with dark chocolate shavings for an elegant touch.
