In a large oven-safe skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
Season the chicken breasts with salt and pepper, then add them to the skillet. Cook each side for about 5-6 minutes until they are golden brown.
Once the chicken is browned, remove the skillet from the heat.
Scatter the halved cherry tomatoes over the chicken, then place the fresh mozzarella slices on top.
Sprinkle the chopped basil over everything for a fresh flavor burst.
Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through (internal temperature should reach 165°F or 75°C).
Once done, remove from the oven and let it rest for 5 minutes before serving. Drizzle with balsamic glaze if desired.
