8 oz (225g) pasta (penne or fusilli works best)

2 cups fresh cherry tomatoes, halved

1 cup cottage cheese

2 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon dried oregano

Salt and pepper, to taste

Fresh basil leaves, for garnish

1/4 cup grated Parmesan cheese (optional)

Red pepper flakes (optional, for a kick)

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Drain and set aside, reserving a cup of pasta water.

    Prepare the Tomato Mixture: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.

      Add Cherry Tomatoes: Add the halved cherry tomatoes to the skillet, along with dried oregano, salt, and pepper. Cook for about 5-7 minutes, stirring gently, until the tomatoes are softened and start to release their juices.

        Combine Ingredients: Reduce the heat to low, then add the cooked pasta directly into the skillet with the tomatoes. Stir in the cottage cheese until well combined. If the mixture is too thick, gradually add some reserved pasta water until desired creaminess is achieved.

          Final Touches: Taste and adjust seasoning if necessary. Add red pepper flakes for a spicy kick if desired.
