2 large ripe tomatoes, chopped

1 cup all-purpose flour

1/2 cup cornmeal

1/2 teaspoon baking powder

1 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon smoked paprika

1 tablespoon fresh basil, chopped

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 cup green onions, sliced

2 large eggs, beaten

1/4 cup milk

In a large mixing bowl, combine the all-purpose flour, cornmeal, baking powder, garlic powder, onion powder, smoked paprika, salt, and black pepper. Mix well to thoroughly distribute all dry ingredients.

    In another bowl, whisk together the beaten eggs and milk until well combined.

      Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are fine.

        Fold in the chopped tomatoes, fresh basil, and sliced green onions until evenly incorporated into the batter.

          Heat about 1/2 inch of oil in a large skillet over medium-high heat. To test if the oil is hot enough, drop a small amount of batter into the oil; it should sizzle and float to the top.

            Using a tablespoon, carefully drop spoonfuls of the batter into the hot oil, making sure not to overcrowd the pan. Fry for 2-3 minutes on each side, or until they are golden brown and crispy.

              Once cooked, transfer fritters to a paper towel-lined plate to drain excess oil.

                Repeat with the remaining batter, adding more oil to the skillet as needed.
