Ingredients

8 oz penne pasta

2 Italian sausages (mild or spicy, casings removed)

3 cups fresh spinach

1 can (14 oz) diced tomatoes, with juice

1 medium onion, chopped

3 cloves garlic, minced

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional for heat)

2 tablespoons olive oil

Salt and pepper to taste

Fresh basil leaves for garnish

Grated Parmesan cheese for serving

Instructions

Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to the package instructions until al dente. Drain and set aside, reserving 1/2 cup of the pasta water.

Sauté Sausage: In a large skillet, heat the olive oil over medium heat. Add the sausage meat and break it into small pieces with a wooden spoon. Cook until browned and cooked through, about 5-7 minutes.

Add Aromatics: Add the chopped onion to the skillet and sauté for about 3 minutes until the onions are translucent. Then add the minced garlic, dried oregano, and red pepper flakes (if using). Cook for another 1-2 minutes until fragrant.

Incorporate Tomatoes and Spinach: Pour in the diced tomatoes with their juice and stir to combine. Let it simmer for 5 minutes allowing the flavors to meld. Then, add the fresh spinach and stir until wilted, about 2 minutes.

Combine with Pasta: Add the cooked pasta to the skillet along with a splash of the reserved pasta water to help create a light sauce. Stir well to mix everything together. Season with salt and pepper to taste.

Serve: Plate the pasta and garnish with fresh basil leaves and a generous sprinkle of grated Parmesan cheese.

              Prep Time: 10 minutes | Total Time: 30 minutes | Servings: 4

                - Presentation Tips: Serve the pasta in shallow bowls, topping each with a few extra basil leaves and a dusting of Parmesan for an inviting look. You can also drizzle a bit of olive oil on top for added flavor and shine. Enjoy your delightful dish!
