500g (approximately 1 lb) starchy potatoes, peeled and quartered

100g (about ¾ cup) all-purpose flour, plus extra for dusting

1 teaspoon baking powder

1 teaspoon salt

2 tablespoons unsalted butter, melted

2 tablespoons chopped fresh chives (optional)

Instructions
 

Boil Potatoes: In a large pot, bring salted water to a boil. Add the peeled and quartered potatoes and cook for about 15-20 minutes, or until tender when pierced with a fork.

    Mash Potatoes: Drain the potatoes and allow them to steam dry for a minute or two. Then, mash the potatoes until smooth and let them cool slightly.

      Prepare Dough: In a mixing bowl, combine the mashed potatoes, flour, baking powder, salt, and melted butter. If using, fold in the chopped chives. Mix until it forms a soft dough.

        Shape Farl: On a lightly floured surface, take half of the dough and shape it into a disc about 1 cm thick. Flour the top lightly with additional flour. Repeat with the remaining dough.

          Cook the Farls: Heat a non-stick skillet or griddle over medium heat. Place the farls in the pan and cook for about 5-7 minutes on each side, or until golden brown and cooked through. You may need to adjust the heat to prevent burning.

            Serve: Remove the farls from the skillet and keep warm while you cook the remaining pieces. Cut each farl into quarters and serve warm.
