1 cup cherry tomatoes, halved

1 tablespoon olive oil

1 teaspoon balsamic vinegar

1 clove garlic, minced

1 cup cream cheese, softened

1/2 cup grated mozzarella cheese

1/2 cup grated parmesan cheese

1 teaspoon dried oregano

Salt and pepper to taste

Fresh basil leaves, for garnish

Baguette slices or tortilla chips, for serving

Instructions
 

Preheat your oven to 375°F (190°C).

    In a mixing bowl, combine the halved cherry tomatoes, olive oil, balsamic vinegar, minced garlic, and a pinch of salt and pepper. Toss well to coat.

      Spread the tomato mixture onto a baking dish and bake for about 10-12 minutes, or until the tomatoes are softened and slightly blistered.

        While the tomatoes are baking, in a separate bowl, blend together the softened cream cheese, mozzarella cheese, parmesan cheese, dried oregano, and a touch more salt and pepper until smooth and creamy.

          Remove the tomatoes from the oven and let them cool slightly. Stir the roasted tomatoes into the cheese mixture until evenly combined.

            Transfer the cheese and tomato mixture back into the baking dish and spread it out evenly.

              Bake in the oven for an additional 15-20 minutes, or until the dip is hot and bubbly, and the top is lightly golden.

                Remove from the oven and let it cool for a couple of minutes. Garnish with freshly chopped basil leaves before serving.

                  Serve warm with baguette slices or tortilla chips for dipping. Enjoy your cheesy, delicious bruschetta dip!
