2 large eggs

1 cup mango puree (fresh or from canned mangoes)

1 tablespoon lime juice

1 teaspoon vanilla extract

1 cup whipped cream (for topping)

Prepare the Crust: Preheat your oven to 350°F (175°C). In a bowl, mix together the graham cracker crumbs, melted butter, and 2 tablespoons of sugar until well combined. Press this mixture firmly into the bottom of a 9-inch springform pan to create an even crust. Bake for 8-10 minutes, then remove from the oven and let cool slightly.

    Make the Filling: In a large mixing bowl, beat the softened cream cheese with 1 cup of sugar using an electric mixer on medium speed until smooth and creamy (about 3 minutes). Add the eggs one at a time, beating well after each addition.
