Tuscan Chicken Pasta

Ingredients
  

300g penne pasta

2 boneless, skinless chicken breasts, sliced

2 tablespoons olive oil

3 cloves garlic, minced

1 cup sun-dried tomatoes, chopped

1 cup spinach, fresh

1 cup heavy cream

½ cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh basil leaves for garnish

Instructions
 

In a large pot of salted boiling water, cook the penne pasta according to package instructions until al dente. Drain and set aside.

    While the pasta cooks, heat the olive oil in a large skillet over medium heat. Season the sliced chicken breasts with salt, pepper, and Italian seasoning.

      Add the seasoned chicken to the skillet and cook for about 5-7 minutes, or until the chicken is cooked through and golden brown. Remove the chicken from the skillet and set aside.

        In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant.

          Stir in the chopped sun-dried tomatoes and fresh spinach. Cook until the spinach wilts, about 2-3 minutes.

            Reduce the heat to low, then add the heavy cream to the skillet, stirring to combine with the vegetables. Allow it to gently simmer for about 2 minutes.

              Add the cooked chicken back into the skillet along with the drained penne pasta. Mix well to coat the pasta and chicken in the creamy sauce.

                Stir in the grated Parmesan cheese and season with more salt and pepper to taste. Cook for an additional 1-2 minutes until warmed through.

                  Remove from heat and garnish with fresh basil leaves before serving.
