4 medium-sized russet potatoes

1 cup shredded sharp cheddar cheese

½ cup grated Parmesan cheese

4 tablespoons unsalted butter, melted

3 cloves garlic, minced

1 tablespoon fresh rosemary, finely chopped

1 tablespoon fresh thyme, finely chopped

Salt and black pepper to taste

¼ cup sour cream (optional, for serving)

Chopped chives for garnish

Instructions
 

Preheat your oven to 425°F (220°C).

    Wash and dry the potatoes thoroughly. Using a sharp knife, slice them crosswise into thin slits, being careful not to cut all the way through; leave the bottom intact. Aim for slices about 1/4 inch apart.

      Place the sliced potatoes on a baking sheet lined with parchment paper.

        In a small bowl, mix the melted butter, minced garlic, chopped rosemary, thyme, and a pinch of salt and pepper.

          Brush the garlic herb butter generously over each potato, making sure to allow it to seep into the slits.

            Cover the potatoes with aluminum foil and bake in the preheated oven for 30 minutes.

              After 30 minutes, remove the foil and sprinkle a mix of cheddar and Parmesan cheese into each of the potato slits, letting some fall onto the edges.

                Return the potatoes to the oven and bake for an additional 15-20 minutes or until the potatoes are tender and the cheese is melted and bubbly.

                  Once done, remove from the oven and let them cool for a few minutes. Before serving, drizzle any remaining herb butter over the potatoes.

                    Serve with a dollop of sour cream on top and garnish with chopped chives for a pop of color.
