Ingredients
  

1 lb ground beef (80/20 for optimal juiciness)

4 slices of rye bread (or marbled rye for a twist)

1 medium onion, thinly sliced

4 slices of Swiss cheese

2 tablespoons unsalted butter

1 tablespoon olive oil

Salt and pepper to taste

For the Secret Sauce:

1/4 cup mayonnaise

2 tablespoons ketchup

1 tablespoon Dijon mustard

1 tablespoon pickle relish

1 teaspoon Worcestershire sauce

1 teaspoon garlic powder

Pinch of cayenne pepper (optional, for heat)

Prepare the Secret Sauce: In a small bowl, mix together mayonnaise, ketchup, Dijon mustard, pickle relish, Worcestershire sauce, garlic powder, and cayenne pepper. Adjust seasoning to taste. Set aside.

    Cook the Onions: In a skillet, heat olive oil over medium heat. Add the sliced onions and a pinch of salt. Cook, stirring occasionally, until the onions are soft and caramelized, about 15-20 minutes. Remove from heat and set aside.

      Form the Patties: While the onions are cooking, divide the ground beef into two equal portions. Gently form each portion into a patty about the size of the bread. Season both sides with salt and pepper.

        Cook the Patties: In the same skillet used for the onions, increase heat to medium-high. Add a little butter if necessary. Place the patties in the skillet and cook for about 4-5 minutes on each side, or until browned and cooked to your desired doneness. During the last minute of cooking, place a slice of Swiss cheese on each patty to melt.

          Assemble the Patty Melt: Butter one side of each slice of rye bread. On the unbuttered side, spread a generous amount of secret sauce. Place the cheese-topped patties on two slices, divide the caramelized onions between them, and top with the other slices of bread, buttered side out.

            Grill the Patty Melts: In the same skillet, carefully place the assembled melts. Cook over medium heat for about 3-4 minutes on each side, or until the bread is golden brown and crispy, and the cheese melts to perfection.

              Serve: Remove from the skillet, slice in half if desired, and serve hot with extra secret sauce on the side for dipping.
